Gluten-Free Quiche

Food fads and food allergies are constantly changing with diets, social media, and time. At Volcano Village Lodge we are always tweaking recipes and trying new ones to accommodate our guests dietary restrictions. A gluten-free diet is at the top of the list. While some may fear cooking gluten-free, for breakfast it’s nothing to be scared of. Depending on how severe your food allergy is to gluten, the best way to ensure gluten-free meals, is to make sure it says it on the packaging. A lot of grocery items should naturally be gluten-free, but are not. Always double check. Our crust-less quiche is quite a hit. A medley of vegetables, cheeses, and eggs, it’s sure to be a pleaser for most people. Ingredients 10 eggs 1/4 cup milk Cheese (ricotta/feta, shredded, boursin) Bacon or sausage (optional) 1 diced onion 1 cup or more of chopped veggies (spinach, pepper, mushroom) Salt and pepper to taste Preheat oven to 375*. Grease a 9inch round baking pan. In a medium size skillet, saute onion and all veggies except spinach. Set inside greased pan. At this time you can place the prepared meat as well. Whisk eggs and milk. Add salt and pepper. Pour the egg mixture into pan with veggies and meat. Add sprinkles of cheeses and top the entire pan with chopped spinach. Bake for 25 minutes or until the eggs are set in the middle of the pan.
