Cinnamon banana muffins

Makes: 12 Ingredients 3 very ripe bananas, smashed up 1/3 cup melted butter 3/4 cup sugar 1 egg, beaten 1 tsp vanilla 1 1/2 cups flour 1 tsp baking soda 1/4 tsp cinnamon ¼ tsp allspice Pinch of salt Topping: 1/3 cup sugar 1 tbsp. cinnamon Directions: Preheat the oven to 350 degrees. Coat a cupcake pan with cooking spray or line with muffin wrappers.Mix the mashed bananas, butter, sugar, egg, and vanilla together with a beater until creamy.Combine the flour, baking soda, cinnamon, allspice, and salt together in a separate bowl then mix well. Gently add the flour mixture into the banana mixture until just combined. Don’t over mix. Sprinkle cinnamon top on batter, let sit for at least 5 minutes. Bake for 20 minutes, or until a tester inserted into the center comes out clean. Remove from the oven then let it cool for a few minutes before transferring to a cooling rack to finish cooling. Slice and serve with butter if desired. Enjoy.
